We could not have been more pleased with our stay at Cheval Three Quays - the room was sophisticated, comfortable, spacious, with a terrific view on the Thames (we splurged for a river view with balcony). We stayed for the week - so having a kitchen and washer/dryer proved to be incredibly useful and a great value.
This hotel is perfect for those who seek to be close to transport - Tower Bridge Station and the Thames Clipper are right there - but do not care to be in the midst of all the tourists. (The London Bridge and Tower of London is adjacent to the hotel but is busy only during the day - so nights are pleasantly quiet.)
For those seeking nightlife, the excellent Borough Market is across the river, as are many other spots within reasonable walking distance.
There are no restaurants directly in the hotel, but there are options - Coppa is a lovely sit-down restaurant on the river - with good-not great food (be sure to reserve your table pod on the riverwalk). Numerous cafes, Starbucks, and a Wagamama across the street. The Cheval has an App that can connect you with food deliveries to your room if desired.
Highly recommend!
